Do You Know Ultrasonic Food Cutting Technology?

Ultrasonic food cutting technology uses high-frequency (e.g., 20 kHz to 40 kHz) vibrations generated by a blade, achieving clean, precise cutting without generating heat. Key advantages include minimal product deformation, low residue (self-cleaning), low tool wear, smooth and consistent cut surfaces, and improved production efficiency and hygiene. This technology is widely used in the portioning and processing of a variety of foods, including baked goods, confectionery, cheese, meat, and frozen foods.

Operating Principle

· High-frequency vibration: An ultrasonic generator converts electrical energy into high-frequency mechanical vibrations, which are then transmitted to the blade.

· Reduced friction: The blade's vibrations create a low-friction cutting surface, allowing the blade to smoothly penetrate the food during the cutting process.

· Heat-free cutting: The vibration process generates no heat, preventing thermal damage to heat-sensitive foods.

Key Advantages

· Minimal product deformation: Due to the low pressure and non-compression during the cutting process, soft foods, such as cakes or cream, are effectively prevented from deforming.

· Hygienic self-cleaning: Low friction reduces the likelihood of food residue adhering to the blade, giving the tool a certain degree of self-cleaning properties. · High Cut Quality: Smooth, clean cut edges are achieved, making it ideal for complex foods containing nuts or fruit fragments. · Long Blade Life: Blades experience less wear than traditional knives, remaining sharper longer and reducing maintenance costs. · High Productivity: Fast cutting speeds reduce downtime due to food sticking, improving overall productivity.

Applications

· Baked Goods: Cakes, bread, pastries, etc.

· Candy and Desserts: Nougat, candy bars, fruit chunks, etc.

· Cheese and Meat: Hard and soft cheeses, sausages, semi-frozen meats, etc.

· Other Foods: Sandwiches, pizza, frozen foods, etc.

Differences from Traditional Cutting

· Mechanical Cutting: Relies on mechanical pressure and the physical action of the blade.

· Ultrasonic Cutting: Relies on high-frequency vibrations to overcome food resistance, achieving cleaner cuts without excessive pressure.

Using Ultrasonic Cutting: High Precision and Minimal Material Wear

Whether in large-scale industrial bakeries, candy production, or cheese processing—our ultrasonic cutting technology is widely used. Customizable cutting geometry for perfect cutting results. Pastries with cream or sugar coatings, as well as other doughy or fatty foods, can be cut or trimmed using ultrasonic technology for optimal aesthetics. We individually adjust the cutting geometry of our longitudinal and transverse cutting tools to suit product requirements.

Self-cleaning cutting blades.

Using ultrasonic vibrations, the welding head retains minimal product residue, achieving a degree of self-cleaning.

Long service life and minimal wear and tear.

Using ultrasonic vibrations, the cutting welding head requires lower operating pressure than conventional cutting tools. This reduces tool wear and significantly improves cut quality. Furthermore, using an ultrasonic cutting system makes maintenance and downtime much easier.
